Twenty-five American whiskeys from nine distillers, poured side by side, from California to Kentucky.

American whiskey has a rulebook, and half the bottles on this table were made to test it.

Many of the bottles featured are craft distilleries that have limited in distribution in the US and most of these bottles have never been imported to Hong Kong.

The rule-keepers. Bottled-in-bond means one distillery, one season, at least four years in a government-watched warehouse, and exactly 100 proof. Bardstown and Starlight show what discipline tastes like.

The heat. Barrel strength and cask strength mean nothing added back. Blackwood and Belle Meade, poured the way they came out of the wood.

The wood. Japanese Mizunara oak. Cherry wood. Toasted staves. Port and wine casks, then peat on top. This is where the rules start to get bent.

The grain. Wheat where rye usually goes, rye where corn usually goes, and Frey Ranch’s four- and five-grain bourbons, which refuse to choose.

The dessert. Then the night winds down with coffee liqueurs, a caramel-pecan one, and a vodka for whoever came with you.
