Part I: The Horse 一馬當先

The ancient valley sat between two hills in the place where the fog rolls in off the water and the oak trees grow sideways from decades of arguing with the wind. The corn grew there in stubborn rows, and the water that ran beneath it carried something old — minerals from stone that had been sleeping since before anyone thought to count the years.

No one chose this place. The Horse found it.

They say the spirits do not sleep so much as wait — tucked between the folds of lunar time, patient as only ancient things can be, but the Horse was never good at patience. The Horse was always moving, leaning into the next thing, nostrils wide, eyes scanning the horizon for something worth running toward.

When the valley called, the Horse didn't deliberate or wait for consensus. The others were capable — every one of them. Wiser in certain ways, more measured, more knowing. But capability without motion is just potential, and potential never found anything. Someone had to go first. That was the nature of the horse, not the pursuit of glory, but driven by a sense of responsibility. A willingness to step into the unknown so that those who follow inherit ground already tested. Courage not as the absence of doubt, but in the decision that doubt was not a good reason to stop.

So the Horse crossed into the valley shrouded in fog to find an old distillery — the kind of quiet that belongs to a place still becoming what it's going to be. Copper stills cool to the touch. The smell of char and caramel hanging in the dark. A single amber light above the aging room door.

The Horse moved through it all slowly, which was unusual.

It stood before the barrel for a long time. Pressed one hoof against the wood and felt the years inside it. The grain whispering to the charred oak. The spirit softening into something more patient than it started as. The slow conversation between liquid and oak that nobody can rush and nobody can force.

Here, the Horse thought. This is the one. Not because it was finished. Because it was ready to be found.

Some things wait to be discovered. Others need someone to declare them discovered first — to stake a flag in uncertain ground and say we start here, the rest of you follow. The barrel had been waiting for exactly that.

The Horse left before dawn, as they always do. What it left behind was harder to explain — a warmth in the wood that the master distiller would notice but never be able to replicate. A momentum already in motion. A finish of conviction.

Eleven more spirits still folded in their waiting, each carrying their own gifts. But none of them would have to find the valley. None of them would have to convince themselves the fog was worth entering. The path exists because someone walked it first. The courage to lead is the gift you give to everyone who comes after you.

THe PINHOOK STORY

Pinhook Bourbon was founded with a simple but uncommon philosophy: every vintage should reflect a moment in time.

Unlike most bourbon brands that chase consistency year after year, Pinhook treats whiskey more like wine. Each release is a snapshot of a specific season, mash bill, and maturation cycle — bottled at its peak rather than blended to match a permanent flavor profile.

The brand was co-founded by Sean Josephs, whose background in hospitality shaped Pinhook’s focus on balance, drinkability, and nuance rather than brute proof or marketing hype.

A Vintage Approach to Bourbon

Pinhook’s name comes from the horse racing term “pinhooking” — buying young horses with the intent to develop them and resell them at maturity. It’s a nod to Kentucky heritage and to the idea of patient development over time.

Every year:

  • The mash bill may vary

  • The proof may vary

  • The flavor profile evolves

  • The label features a new thoroughbred

The point isn’t sameness. The point is character.

Castle & Key Roots

In recent years, much of Pinhook’s whiskey has been distilled and matured at Castle & Key Distillery, one of Kentucky’s most storied and beautifully restored distilleries. The combination of thoughtful distillation and careful barrel selection has helped define Pinhook’s house style — elegant, layered, and expressive.

The FINE PRINT

Allocation Policy Given the limited nature of this single barrel release, total requests may exceed available bottles. If that occurs, allocations may be adjusted to help ensure broad access across our community. We may proportionally reduce individual requests so more people have the opportunity to participate. Pricing will be confirmed prior to final purchase and is subject to change until allocation confirmation.Thank you for understanding the spirit of fairness behind this release.

Age Requirement Participants must be 21 years of age or older. Valid government-issued identification will be required at the time of pickup.

Pickup Policy (No Delivery) Bottles must be picked up in person at the designated pickup location (Bay Area - California only) and timeframe. We do not provide shipping or delivery. Each individual is responsible for arranging pickup personally or coordinating pickup through a friend or family member who is 21 or older.

Payment & Hold Period Allocated bottles must be paid for within the timeframe communicated in the allocation notice. Unpaid allocations may be released to others. Release timing is subject to bottling and production schedules.

No Resale / Commercial Intent This release is intended for personal enjoyment within our community. We reserve the right to decline allocation if we reasonably believe the intent is resale. This is a private allocation made available through a licensed retailer.We reserve the right to refuse sale or allocation at our discretion.

Community Update The former Gung Hay Fat Choy Whisky Group is now operating as the Twelve Spirits Society. This release is organized under that name going forward.
